“Chong Qing” Diced Chicken with Dried Chilli
The all-time favourite and classic dish, “Chong Qing” Diced Chicken with Dried Chilli 重庆辣子鸡 (S $28, M $42, L $56) where juicy chunks of fried chicken are served with lashings of spices and dried chillies harvested from the Chongqing region and deep-fried garlic for the added fragrance
Duet of Traditional Crispy Duck stuffed with Foie Gras and Glutinous Rice
Not to be missed is the Duet of Traditional Crispy Duck stuffed with Foie Gras and Glutinous Rice 法国鹅肝糯米鸭 ($88 – Half, $168 – Whole), serving up rolls of deboned roasted duck stuffed with prized Western foie gras and traditional Eastern glutinuous rice
Accompanied with two house made sauces for dipping: Fresh Pineapple Sauce 鲜果凤梨酱 and Minced Ginger Vinegar Sauce 子姜茸浙醋汁. With the long hours involved in preparation of this new dish, diners will have to pre-order due to its limited quantities daily.

Boiled Sliced Fish with Spicy Chilli Sauce
Seafood is also not amiss with the warm and numbing Boiled Sliced Fish with Spicy Chilli Sauce 沸腾鱼片 (S $38, M $57, L $76), dressing up naturally sweet freshwater fish with a gravy infused with whole chillies and Sichuan peppers.
Signature Beancurd Medley
Put all the fire out with the exclusive Signature Beancurd Medley 豆中之重 (S $28, M $42, L$56) that brings three types of beancurd – soy, fried purple rice and tauhuay – done three ways – steamed, fried, and braised – for a medley of umami textures that will delight both the senses of sight and taste.
They are accompanied by minced meat and Chinese lettuce for a plate of unadulterated sweetness and ample flavours.
