It’s hard to pinpoint who the real Jimmy Chok is. In a society where brains are equated to jobs in sleek air-conditioned offices in central parts of the country, Jimmy Chok is one of the renegade thugs who, despite being untrained, went against the general grain and opted for the tough kitchen life.
He has kick-started the kitchens of fig leaf, Coriander Leaf and Butterbean before finally setting up his own restaurant venture ‘Salt’ – a no-frills space tucked away in the slightly off-the-path Amoy Street and it is here where Chok, once again, sets his rules and breaks the mould. Where the ‘East-meets-West’ aka ‘fusion’ tag has suffered a catastrophic death in the Asian culinary scene, Chok has gone on to unabashedly label his cuisine ‘fusion’.
